Corn and Potato Soup
Ingredients
butter or margarine
onion (chopped)
garlic cloves (crushed)
potato (cut into cubes)
tomatoes (chopped)
corn (canned or fresh)
paprika
vegetable stock or chicken stock
vegetable stock or chicken stock
freshly ground black pepper
Fresh mint leaves (chopped)

In a deep pan melt butter on a moderate flame, add the onion and garlic and fry until golden brown.


Add potatoes, tomatoes and corn and cook for ten minutes.


Now add the chicken stock, paprika, green chilli, black pepper and salt.


Cover and cook until potato is tender.


Before serving add the mint leaves.


Serve hot.
